Healthy relationships create healthy meals

The new St John of God Midland Public Hospital runs a fast, efficient catering operation, serving 1,000 meals a day, thanks to Moffat’s equipment solutions for the healthcare sector.

THE BRIEF – MEETING PATIENTS’ NEEDS
The new AU$360 million facility that houses 307-beds marked a new era in healthcare for the east and wheat belt regions of Western Australia. Requiring a complete production kitchen that could prepare, preserve and plate meals, the hospital turned to Moffat for its production equipment and healthcare meal delivery systems.
A close collaboration with Arcus Australia enabled a cook-chill process for pre-preparation and re-thermalisation of requested meals.

THE PROJECT – SETTING NEW STANDARDS
As a pioneering, state-of-the-art medical facility, the new hospital needed catering facilities to match. Designed specifically for cook-chill, the operation enables flexibility, reduced labour costs, extended shelf-life for meals and minimises food waste. Food is cooked and then rapidly chilled and stored at controlled temperatures for up to five days. When needed, the food is cold-plated and re-thermalised to meet patients’ orders, ensuring requests and special dietary needs are always met. 

The cutting-edge Waldorf cooking suite and the Burlodge B-POD meal delivery system were selected for the operation.
“Waldorf cooking suites are the best on the market.  It’s the primary brand in terms of Moffat’s equipment and has excellent service and support,” says Phil Daly, Arcus’s sales and marketing manager.

The Burlodge B-Pod meal delivery system features contemporary design, advanced technology and ergonomic features. Built-in HACCP Monitoring ensures food quality and safety and a networking through a LAN of WiFi connection means operators can communicate with the equipment in real time from a centralised PC.
On the B-Pod itself, the LCD Control Centre is easy-to-use with three cycle touch pads, a count-down timer with hot and cold temperatures, audible alarm and automatic cycle timer.

Wexiodisk, Rendisk and Washtech products were used for the warewashing section of the hospital to reduce water, chemical and energy consumption and reduce running costs.

THE RESULTS – MAIXMISING RESULTS, MINIMISING COSTS
Moffat’s team of healthcare specialists have worked closely with the management of the foodservice operations at the hospital to create a first-class, efficient service that meets patients’ needs whilst minimising costs and energy consumption.
