Known for its flexible learning spaces to encourage collaboration and academic excellence, the purpose built CATS College facility in Cambridge needed to offer a home away from home dining experience for its international students.

THE BRIEF – HIGH SPEED OFFER

The multi-cultural base of students aged 14 upwards combined with the demands of as many as 700 covers a day, created the need for a diverse and highly efficient catering offer.
As a boarding school that caters seven days a week for several different meal occasions and a broad range of menu items ranging from pasta to traditional Asian dishes, the new 230 bedroom facility in a former General Electric building, needed to guarantee high productivity and speed combined with low energy consumption to minimise running costs. 
A practical teaching area for students studying home economics was also required.

THE PROJECT – SPEEDY SERVICE

To work within the existing structure, the architect – HK Foodservice Architecture – was faced with the challenge of structural pillars positioned at critical points of the kitchen, which added further consideration to equipment selection.

The Ambach System 700 DS line was selected after a visit to the Ambach factory based on its flexibility to combine modules into a smaller footprint, without compromising on reliability. Built on an open frame construction, which allows for ease of installation and servicing, the heat also distributes throughout the modules enabling high performance cooking.

Specially designed to offer a wide number of menu choices in limited space, the innovative new Ambach IQ900 multipurpose bratt pan, was also installed, for the first time in the UK. The multi-functional compact piece of kit, which sets new standards in catering and flexibility performance, combines a plancha, multi-zone plancha, cooker, multi-basket cooker with timer, steam cooker and fryer with timer, reducing the operational footprint by 30%. To minimise pressure for the chef and kitchen team, an ergonomic touch screen control panel enables cooking times to be selected via 200 pre-set cooking solution icons or entered manually for customised cooking.

By project managing, working collaboratively and maintaining an ongoing dialogue with all parties through meetings and exchanging ideas, the Elizabeth House renovation was delivered three months ahead of schedule, exceeding expectations.
Working closely with the client to really understand their needs and objectives, the catering facility has the same high standards as the courses it teaches.
